Delicious Low Fat Spinach Dip
I bought a spinach dip and absolutely loved until I looked at all the salt, fat grams and preservatives. I tried my own version and it was fantastic. I would eat spinach but I never really liked it. This I love!
8 oz. frozen Spinach rinsed well and pressed in a strainer
I small carton small curd no or low fat cottage cheese
(This is your main liquid so don’t drain it)
I pk no fat cream cheese that has been left out to soften
Spin the cottage cheese and spinach first in blender
Then use softened creme cheese to go easier on blades
Blend all this together just a couple of minutes
Try the dip to see if the spinach consistency is to your
liking>Blend a little more if not, this is a very quick dish
to make>Scrape into a container you have a lid for and will
hold about a quart or close
1 or 2 chopped fire roasted red peppers (from jar soaked in water
awhile if containing much salt or even overnight then rinse
(if you are salt conscious as I am - no if not)
or fresh raw which is better for you in either case
and naturally all fresh ingredients always best
1-8 oz. can Water Chestnuts drained
chop, add to dip
Add another pk.cream cheese chopped, cubed however you like
those bits and bites of the cream cheese makes it really good and
maybe you wouldn’t want to add the second carton stirred in with
chestnut and peppers but to me it helps make it a dip I can have about
all I want of and that is something over the years I have had to deny
myself being so crazy about dips
Refrigerate a couple hours for best results
I used UTZ no salt BBQ chips but it does have some fat so now on
I have decided to use lightly salted rice cakes and sprinkle one or two
BBQ crushed chips on top dip I don’t think the 2 to four chips would
really add so much fat if you have say 2 rice cakes loaded with dip
I will be trying this in some different ways. Maybe on celery?

will get plenty of Spinach- loving every bit and it is something they
can learn to make if you want to make double and freeze half just
freeze the part you blended because adding the water chestnuts, cream
cheese and roasted pepper after thawing will make it taste

16 oz Spinach, large carton cottage cheese (the new Kraft is fantastic!) but just the one cream cheese before freezing adding another to each after thawing with peppers and chestnuts.

I have always wondered why it is so hard for anyone to come up with a frozen
product low or no fat without adding a ton of salt, they would get rich. Frozen food does not
need to be loaded with salt! I am sure the more we make this and try different things the more
ideas we will get.

Health benefits of spinach are for eyesight, blood pressure, strengthens muscles, cataract, heart attack, bone mineralization, skin protection, protein rich. It is rich in minerals and vitamins. Spinach for eyes, the nervous system, cardiovascular disorders, skin, bones and helps fight cancer! I could go on and this does not take into the consideration benefits of the low or no fat cheeses. I think this is going to be number one on my new diet! I think I am going to plant peppers in pots this week. The jar peppers are fine maybe for kids or people salt doesn't hurt but I want this recipe absolutely safe to eat to my heart's (or stomach's) content.

Popeye will eat all that dip am not going near spinach though it is said that it's so great ;)
Those peppers and water chestnuts and cream cheese is all you taste, well I love the BBQ chip to dip but can't have much of that, no salt although it taste like it and delicious but a little too much fat if you can't hold back, meant to make some tonight but busy trying to get a lot of things done. Taking pictures and getting them separated and filed together is daggone big job!

Thank you Cloverleaf, it is really good and yes veggies to dip with would be great, I simply am trying to replace the chips I crave! lol This is a great one to get kids hooked on. I think I should write out the recipe a little better and I will try to remember to do that tomorrow.
